It’d be nice to have a option to just fill with a dither pattern.
also it would be nice to be able to paint in a custom pattern like a pixel brick pattern.

You can use this custom brush to paint and also fill areas with the fill tool.
I know but in the form of a bucket would be nice as well so you can fill a section face and not have to worry about missing a part.
Confused on what you mean by a “bucket tool“ other than the paint bucket/fill tool.
